Each bag of seed contains at least 175 Payne's Hawkins Prolific heirloom corn seeds (2 1/2 oz.). This is a white dent field corn that grows 10 - 12 feet tall.

These heirloom corn seeds have not been artificially enhanced in any way. We do not use herbicide or pesticide on Payne Mountain Farms. This corn has been grown (and seeds saved) on Payne Mountain Farms for over 80 years.

Some stalks produce three ears but most produce two. Once in a while, a stalk will produce four ears!

When grown in fertile soil, this corn is full of minerals and vitamins. It is a nutritious food for animals and humans. Since field corn has less sugar than "sweet" corn, it is bettered tolerated by people with diabetes and sugar imbalances.

As the story goes, Grandpa Payne started planting Hawkins Prolific white field corn when he was a young man. He ate it fresh, cut off the cob, and simmered in a cast iron skillet.

Our grandparents also dried field corn for making corn meal, grits, and hominy. Some people think field corn is grown just for animal feed, but they are wrong. Field corn is delicious, and if you have never tried it you are missing out.

My favorite way to fix field corn is sometimes creamed corn or fried corn, but everyone I see on YouTube does it differently. I do not add corn starch, bacon grease, cream, milk, or flour! All I add is butter, salt, and water as needed to keep it from sticking while simmering.

When done, after about five minutes of cooking, the spoon should stand up in the pan!

Field corn, cut off the cob and cooked right, makes a wonderful side dish. My favorite summer vegetable dinner includes field corn, fried okra, white-half runner green beans, and slices of homegrown tomatoes.

*Plant seeds in rich, moist soil that gets lots of sunshine. Treat growing plants like any field corn.
